  • ½ cup butter (melted)
  • 5 ounces evaporated milk
  • 3.4 ounces instant lemon pudding mix
  • 2 (8-ounce) packages cream cheese
  • ¾ cup frozen lemonade concentrate
  • 1 ½ cups fresh blueberries
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F and spray an 8×8 baking dish with non-stick spray.
  2. For the crust, mix brown sugar, flour, chopped pecans, and melted butter in a bowl. Press into the bottom of the baking dish and bake for 15 minutes. Allow to cool.
  3. In a separate bowl, combine evaporated milk and pudding mix; beat until thickened. In another bowl, whip cream cheese until fluffy and add frozen lemonade concentrate gradually. Fold in pudding mixture until smooth and spread over the cooled crust.
  4. For the blueberry topping, simmer blueberries with sugar, lemon juice, and cornstarch in a saucepan until thickened (about 5–7 minutes). Let cool slightly before pouring over the cream cheese layer.
