  • 2 cups cherries (washed, pitted, halved)
  • 1 1/3 cups granulated sugar
  • 2 large eggs
  • 5 tablespoons unsalted butter (melted)
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper, spread halved cherries on it, sprinkle with sugar, and roast for about 10 minutes until softened.
  2. Lower oven temperature to 325°F. Prepare an 8×8 inch baking pan with non-stick spray and parchment paper.
  3. In one bowl, sift together flour, cocoa powder, and salt. In another bowl, beat sugar and eggs until light and fluffy.
  4. Mix melted butter into the egg mixture until combined. Fold dry ingredients into wet ingredients gently.
  5. Add half of the roasted cherries and chocolate chips; fold until just combined.
  6. Pour batter into prepared pan and bake for 40–50 minutes or until edges are set but center is slightly underdone.
  7. Allow brownies to cool completely before cutting into squares.
