Ingredients
- 4 large russet potatoes
- 1 cup sour cream
- ½ cup milk
- ½ cup shredded cheddar cheese
- ⅓ cup cooked bacon, crumbled
- ¼ cup chives, finely chopped
- 2 tablespoons unsalted butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub the potatoes clean and poke holes with a fork. Bake directly on the oven rack for 45–60 minutes until tender.
- Let cool slightly, then cut in half lengthwise and scoop out the insides into a mixing bowl.
- Mix the potato insides with sour cream, milk, butter, cheddar cheese, bacon, chives, salt, and pepper until smooth.
- Refill the potato skins with the mixture and mound slightly on top.
- Place back on a baking sheet and bake for an additional 15–20 minutes until golden brown.
