  • 4 large russet potatoes
  • 1 cup sour cream
  • ½ cup milk
  • ½ cup shredded cheddar cheese
  • ⅓ cup cooked bacon, crumbled
  • ¼ cup chives, finely chopped
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes clean and poke holes with a fork. Bake directly on the oven rack for 45–60 minutes until tender.
  3. Let cool slightly, then cut in half lengthwise and scoop out the insides into a mixing bowl.
  4. Mix the potato insides with sour cream, milk, butter, cheddar cheese, bacon, chives, salt, and pepper until smooth.
  5. Refill the potato skins with the mixture and mound slightly on top.
  6. Place back on a baking sheet and bake for an additional 15–20 minutes until golden brown.
