- 1 cup whole milk, warmed to 105-115°F
- 2 teaspoons active dry yeast
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 large egg, room temperature
- 1/4 cup unsalted butter, melted
- 3 1/2 to 4 cups all-purpose flour, plus more for dusting
- 1/2 cup unsalted butter, softened
- 1/2 cup packed light brown sugar
- 1 tablespoon ground cinnamon
- 1 1/2 cups peeled, cored, and finely diced apples (e.g., Granny Smith or Fuji)
- 1/4 cup granulated sugar for glaze
- 2 tablespoons water for glaze
Instructions
- In a large bowl, combine the warm milk, yeast, and 1 teaspoon of the granulated sugar. Let sit for 5-10 minutes until foamy.
- Add the remaining 1/4 cup minus 1 teaspoon granulated sugar, salt, egg, and melted butter to the yeast mixture. Mix well.
- Gradually add 3 1/2 cups of the flour, mixing until a soft dough forms. If the dough is too sticky, add up to 1/2 cup more flour, 1 tablespoon at a time, until the dough is manageable.
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
- Place the dough in a lightly greased large bowl, turning once to coat. Cover with plastic wrap and let rise in a warm place for 1 to 1 1/2 hours, or until doubled in size.
- While the dough rises, prepare the filling. In a small bowl, combine the softened butter, brown sugar, and cinnamon until well mixed. Set aside.
- Once the dough has risen, gently punch it down. On a lightly floured surface, roll the dough into a 12×18-inch rectangle.
- Evenly spread the cinnamon-sugar-butter mixture over the rolled dough, leaving a 1/2-inch border on one of the long edges. Sprinkle the finely diced apples over the filling.
- Starting from the long edge opposite the clean border, tightly roll up the dough into a log. Pinch the seam to seal.
- Using a sharp knife, cut the log into 12 equal slices, about 1 1/2 inches thick.
- Arrange the cinnamon rolls cut-side up in a lightly greased 9×13-inch baking pan. Cover loosely with plastic wrap or a clean kitchen towel and let rise again in a warm place for 30-45 minutes, or until nearly doubled in size.
- Preheat oven to 375°F (190°C).
- Bake the rolls for 20-25 minutes, or until golden brown.
- While the rolls are baking, prepare the light glaze. In a small saucepan, combine the 1/4 cup granulated sugar and 2 tablespoons water. Heat over medium heat, stirring until the sugar is dissolved and the mixture is clear. Remove from heat.
- As soon as the rolls come out of the oven, brush them with the warm sugar glaze. Serve warm.
