  • 1 medium butternut squash
  • 1 cup uncooked wild rice blend
  • 2 ½ cups chicken broth
  • ½ cup yellow onion
  • 2 cloves garlic
  • ½ cup dried cranberries
  • ½ cup pecan halves
  • Olive oil, salt, and black pepper

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Toss cubed butternut squash with olive oil, salt, and pepper on the baking sheet. Roast for 20-25 minutes until tender.
  3. Rinse the wild rice blend, then cook in a saucepan with 2 cups chicken broth until tender (about 40-45 minutes).
  4. Heat remaining olive oil in an oven-safe skillet. Brown chicken pieces for 5-7 minutes; remove from skillet.
  5. Sauté diced onion until softened, add minced garlic for another minute, then stir in remaining chicken broth.
  6. In a baking dish, combine cooked wild rice, roasted squash, chicken, cranberries, pecans, and onion-garlic mixture.
  7. Bake for 15-20 minutes until heated through and golden on top.
  8. Let cool for 5 minutes before garnishing with thyme.
