  • 2 tablespoons unsalted butter
  • 2 tablespoons light brown sugar
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium Fuji apples, cored and thinly sliced
  • 1 large egg
  • 1 tablespoon water
  • 2 tablespoons apple jelly
  • 2 fresh thyme sprigs, for garnish

Instructions

  1. For the crust, whisk flour and salt in a bowl. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Chill for 30 minutes.
  2. In a skillet, melt butter over medium heat. Cook onions with salt and pepper for 15-20 minutes until soft. Stir in brown sugar and vinegar; cook until caramelized (10-15 minutes). Let cool.
  3. Preheat oven to 400°F (200°C). Roll chilled dough into a 12-inch round on floured surface. Transfer to parchment-lined baking sheet.
  4. Spread cooled onions on dough, leaving a 2-inch border. Arrange apple slices over onions.
  5. Fold edges of dough over filling; crimp to seal. Brush with egg wash made from whisked egg and water.
  6. Bake for 35-45 minutes until golden and apples are tender.
  7. Brush warm galette with melted apple jelly; garnish with thyme before serving.
