- 2 large yellow onions, thinly sliced
- 4 ounces cream cheese, softened
- 1/2 cup shredded Gruyere cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon brown sugar
- 1 large egg, beaten
Instructions
- Caramelize the onions by heating olive oil in a skillet over medium-low heat. Add sliced onions, salt, and pepper; cook for 30-40 minutes until golden brown. Stir in brown sugar for the final 5 minutes and let cool.
- In a bowl, mix cream cheese, Gruyere, Parmesan, remaining salt, and thyme until smooth.
- Roll out puff pastry on a floured surface. Spread the cream cheese mixture evenly over the pastry, leaving a border. Top with cooled onions.
- Roll tightly from the opposite side of the border and slice into 8 pinwheels.
- Preheat oven to 400°F. Place pinwheels in a lined baking pan and brush with beaten egg.
