  • 2 pounds beef stew meat
  • 1/4 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 large yellow onion
  • 3 medium carrots
  • 2 stalks celery
  • 4 cloves garlic
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 large potatoes
  • Salt and black pepper

Instructions

  1. Dry the beef stew meat with paper towels and coat with flour.
  2. Heat vegetable oil in a large pot. Brown the beef in batches for about 3-4 minutes per side.
  3. Sauté chopped onions, carrots, and celery in the same pot for 5-7 minutes until softened.
  4. Add minced garlic; cook for another minute.
  5. Return browned beef to the pot; stir in beef broth, tomato paste, Worcestershire sauce, thyme, and bay leaf. Simmer while scraping the bottom of the pot.
  6. Cover and simmer on low for 1.5 hours until beef is tender.
  7. Add cubed potatoes; simmer covered for an additional 30-40 minutes until potatoes are tender.
  8. Remove bay leaf, season with salt and pepper to taste, and serve hot.
