  • 1 cup orzo pasta
  • 1/2 cup half-and-half
  • 1/4 cup fresh lemon juice
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh dill

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery; cook for 8-10 minutes until softened.
  2. Add minced garlic and cook for an additional minute.
  3. Pour in chicken broth, add chicken breasts, salt, and pepper; bring to a gentle boil. Cover and simmer for 15-20 minutes until the chicken is cooked.
  4. Remove chicken from pot; shred with two forks.
  5. Bring the broth back to a boil, stir in orzo pasta, and cook according to package instructions (7-9 minutes).
  6. Lower heat; return shredded chicken to the pot along with half-and-half, lemon juice, parsley, and dill. Heat for 2-3 minutes without boiling.
