  • 2 tablespoons unsalted butter
  • 16 ounces cremini mushrooms, sliced
  • 1 cup yellow onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 cups long-grain white rice, uncooked
  • 3 cups chicken broth
  • 2 tablespoons soy sauce
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F.
  2. In a large oven-safe skillet or Dutch oven, melt the butter over medium-high heat. Add the sliced mushrooms and sauté until browned and tender (about 8-10 minutes). Remove from skillet.
  3. In the same skillet, add the diced onion and cook until softened (5-7 minutes). Stir in minced garlic and cook for an additional minute.
  4. Add the uncooked rice to the skillet, stirring constantly for 2 minutes until edges appear translucent.
  5. Pour in chicken broth and soy sauce; mix in the cooked mushrooms along with salt and pepper. Bring to a simmer.
  6. Transfer everything into a greased 9×13 inch baking dish and cover tightly with aluminum foil.
  7. Bake for 30-35 minutes until liquid is absorbed and rice is tender.
  8. Let rest covered for 5-10 minutes before serving. Fluff with a fork and enjoy!
