Ingredients
- 2 tablespoons unsalted butter
- 16 ounces cremini mushrooms, sliced
- 1 cup yellow onion, diced
- 2 cloves garlic, minced
- 1 1/2 cups long-grain white rice, uncooked
- 3 cups chicken broth
- 2 tablespoons soy sauce
- Salt and black pepper to taste
Instructions
- Preheat your oven to 375°F.
- In a large oven-safe skillet or Dutch oven, melt the butter over medium-high heat. Add the sliced mushrooms and sauté until browned and tender (about 8-10 minutes). Remove from skillet.
- In the same skillet, add the diced onion and cook until softened (5-7 minutes). Stir in minced garlic and cook for an additional minute.
- Add the uncooked rice to the skillet, stirring constantly for 2 minutes until edges appear translucent.
- Pour in chicken broth and soy sauce; mix in the cooked mushrooms along with salt and pepper. Bring to a simmer.
- Transfer everything into a greased 9×13 inch baking dish and cover tightly with aluminum foil.
- Bake for 30-35 minutes until liquid is absorbed and rice is tender.
