Instructions

  1. In a large pot or Dutch oven, melt the unsalted butter over medium heat. Add the minced yellow onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes.
  2. Add the minced garlic to the pot and cook for 1 minute more until fragrant.
  3. Stir in the sliced cremini mushrooms. Cook, stirring occasionally, until the mushrooms have released their liquid and are softened and lightly browned, about 8-10 minutes.
  4. Sprinkle the all-purpose flour over the mushrooms and onions. Cook, stirring constantly, for 1 minute to cook out the raw flour taste.
  5. Gradually whisk in the vegetable broth, pouring slowly to prevent lumps. Bring the mixture to a gentle simmer, stirring frequently, and cook until the soup has slightly thickened, about 5 minutes.
  6. Reduce the heat to low. Stir in the heavy cream, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Heat through for 2-3 minutes, being careful not to boil after adding the cream.
  7. Ladle the hot mushroom soup into serving bowls. Garnish each serving with fresh chopped parsley and an additional sprinkle of ground black pepper, as desired. Serve immediately.
