Ingredients
- 1 tablespoon olive oil
- 1 pound ground Italian sausage
- 1 cup chopped yellow onion
- 1 cup chopped celery
- 1 cup chopped carrots
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup ditalini pasta
- 1/4 cup chopped fresh parsley, for garnish
- 1/4 cup grated Parmesan cheese, for garnish
- 1 baguette, for serving
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the ground Italian sausage and cook, breaking it apart with a spoon, until it is browned, about 5-7 minutes. Drain any excess fat from the pot. Remove the cooked sausage and set it aside, leaving 1 tablespoon of fat in the pot.
- Add the chopped yellow onion, chopped celery, and chopped carrots to the pot. Sauté until the vegetables are softened, about 8-10 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
- Return the cooked sausage to the pot. Stir in the crushed tomatoes, cannellini beans, kidney beans, chicken broth, dried oregano, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes to allow the flavors to meld.
- Stir in the ditalini pasta. Continue to simmer, uncovered, for 8-10 minutes, or until the pasta is al dente. If the soup becomes too thick, add a little more chicken broth to reach the desired consistency.
- Ladle the hot Pasta Fagioli into individual serving bowls. Garnish each bowl with chopped fresh parsley and grated Parmesan cheese. Serve immediately with slices of baguette.
