  • 1 pound ground Italian sausage
  • 1 cup chopped yellow onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup ditalini pasta
  • 1/4 cup chopped fresh parsley, for garnish
  • 1/4 cup grated Parmesan cheese, for garnish
  • 1 baguette, for serving

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the ground Italian sausage and cook, breaking it apart with a spoon, until it is browned, about 5-7 minutes. Drain any excess fat from the pot. Remove the cooked sausage and set it aside, leaving 1 tablespoon of fat in the pot.
  2. Add the chopped yellow onion, chopped celery, and chopped carrots to the pot. Sauté until the vegetables are softened, about 8-10 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Return the cooked sausage to the pot. Stir in the crushed tomatoes, cannellini beans, kidney beans, chicken broth, dried oregano, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes to allow the flavors to meld.
  4. Stir in the ditalini pasta. Continue to simmer, uncovered, for 8-10 minutes, or until the pasta is al dente. If the soup becomes too thick, add a little more chicken broth to reach the desired consistency.
  5. Ladle the hot Pasta Fagioli into individual serving bowls. Garnish each bowl with chopped fresh parsley and grated Parmesan cheese. Serve immediately with slices of baguette.
