  • 1/2 cup canned pumpkin puree
  • 1/4 cup granulated sugar
  • 1 large egg (at room temperature)
  • 1/2 cup unsalted butter (melted and cooled)
  • 2 1/4 teaspoons active dry yeast
  • 1 teaspoon salt
  • 4 1/2 cups all-purpose flour (plus more for dusting)

Instructions

  1. In a large bowl, combine warm milk, pumpkin puree, and sugar. Sprinkle yeast over the mixture; let it sit for 5-10 minutes until foamy.
  2. Whisk in egg and melted butter until combined.
  3. In another bowl, mix 4 cups of flour with salt. Gradually add to the wet ingredients, stirring until a shaggy dough forms. Add remaining flour if needed.
  4. Knead dough on a floured surface for 8-10 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise in a warm place for 1 to 1 ½ hours or until doubled.
  6. Punch down the dough; divide into 12 pieces and shape into rolls.
  7. Arrange rolls on a parchment-lined baking sheet; cover and let rise for another 30-45 minutes.
  8. Preheat oven to 375°F during the second rise.
  9. Bake rolls for 15-20 minutes until golden brown.
  10. Let cool slightly before serving and dust with flour.
