- 1/4 teaspoon black pepper
- 4 ounces feta cheese, crumbled
- 1 tablespoon fresh thyme, leaves picked
Instructions
- Preheat oven to 400°F.
- In a large bowl, combine the butternut squash cubes, olive oil, salt, and black pepper. Toss until the squash is evenly coated.
- Spread the seasoned butternut squash in a single layer on a large baking sheet.
- Roast for 20-25 minutes, or until the squash is tender and slightly caramelized, flipping halfway through.
- Remove the baking sheet from the oven. Sprinkle the crumbled feta cheese evenly over the hot roasted squash.
- Return the baking sheet to the oven and roast for an additional 5-7 minutes, or until the feta is slightly softened and warmed through.
- Transfer the roasted butternut squash and feta to an oval serving dish. Garnish with fresh thyme leaves before serving.
