- 1/4 cup light corn syrup
- 1/4 cup water
- 1/2 teaspoon kosher salt
- 1/2 cup unsalted butter (cut into 1-inch pieces)
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon flaky sea salt (for sprinkling)
Instructions
- Grease an 8×8 inch baking pan and line it with parchment paper.
- In a saucepan, combine sugar, corn syrup, water, and kosher salt; stir until moistened.
- Cook over medium heat until the sugar dissolves completely. Increase to medium-high and boil without stirring until it reaches 320°F.
- Meanwhile, warm the butter and heavy cream in another saucepan until melted (do not boil).
- Carefully pour the warm butter and cream into the hot sugar mixture while stirring constantly. The mixture will bubble.
- Return to medium heat and cook, stirring frequently, until it reaches 245°F (about 10-15 minutes).
- Remove from heat and stir in vanilla extract.
- Pour the caramel into the prepared pan and let cool for at least 4 hours.
- Once firm, lift out using parchment overhang and cut into squares. Sprinkle with flaky sea salt.
