- 2 tablespoons olive oil

- 1/4 teaspoon black pepper

- 8 pecan halves

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Slice sweet potatoes into 1-inch thick rounds and place them on the baking sheet.
- Drizzle with olive oil and season with salt and pepper. Roast for 20-25 minutes until fork-tender.
- Allow to cool slightly, scoop out the center of each round to create wells, and reserve the flesh in a bowl.
- Mix reserved flesh with butter, maple syrup, salt, and pepper until creamy.
- Fill each well with the mashed mixture and top with a pecan half.
- Arrange on a platter, drizzle with maple syrup, sprinkle with sea salt and black pepper, and garnish with thyme before serving.
